My name is Ana Carolina Zambrano Paredes, graduated in Human Nutrition and Dietetics from the University of Murcia.

Throughout my life my parents have guided me to follow healthy lifestyle habits, so no one was surprised by my passion for everything related to good nutrition, and even less, when I decided to take the degree in Human Nutrition and Dietetics.

I did my internship at the Morales Meseguer University Hospital, where I decided to do my degree work. As a result, I obtained high honors in my work entitled ¨ Assessment of the Nutritional Status of recent patients in the area of ​​Internal Medicine ¨.

After finishing my degree, I felt that I needed to explore the other side that nutrition offered me, research. I moved to Madrid to study the Master in New Foods at the Autonomous University of Madrid, which gave me the opportunity to spend more time in the laboratory. As a result of so many hours and dedication, I presented an interesting final master thesis, ¨Assessment of the anti-inflammatory, antioxidant and anti-apoptotic effect of an extract of Marjoram on the cardiovascular system¨.

Upon my return to Murcia, I did not expect to have the opportunity to meet Marta Garaulet, whom I had heard countless times throughout my career, and even less so that she would allow me to continue my vocation for nutrition by joining her team.

Currently, I have published my first article ¨Circadian Rhythms in Hormone-sensitive Lipase in Human Adipose Tissue: Relationship to Meal Timing and Fasting Duration¨, which explains why late dinner is associated with a higher degree of obesity and less weight loss during a diet treatment. In addition, I am in the process of collecting a sample of adipose tissue (subcutaneous and visceral), with which we intend to evaluate the effect that melatonin has on the metabolism of insulin in adipose tissue.

My goal is to be able, one day, to pass on my passion for nutrition, to help people and make them feel better about themselves.
